I don't often have sushi in London, because it's so damned expensive here. This though is a dark horse in many ways: 1. The chef is Thai / Colombian, not Japanese - though he is trained classically in Tokyo. 2. The restaurant is a mega unassuming neighborhood joint. 3. You can book with them via Instagram DMs. 4. The chef's assistant is his mum who will regularly tell him off in front of diners. However! The food was fantastic. Chris, the chef, brings unorthodox ingredients into the hallowed art of sushi-making and is bloody brilliant at doing so. Strawberry-yuzu gel on butter fish. Parmesan and truffle on o-toro (!!!?). And my favourite - shiro miso with Thai holy basil. Who would have thought? The flavours worked so seamlessly together it was as if they were tried-and-true combinations. Another bonus: each of Chris's sessions are 8 diners only, so bring your friends and book one session out. You'll have a ball.
