A “salad bowl” rather than a melting pot of cultures, Singapore is a diverse city-state known as one of the world’s top destinations
Singapore
Laksa is a spicy noodle dish that usually consists of seafood served in a broth of coconut milk or assam (tamarind). You’ll encounter different types of the delicacy across Southeast Asia, but variations of Curry Laksa—also known as Nyonya Laksa or Laksa Lemak—are the most popular in Singapore. Peranakan in origin, the local version features thick bee hoon (rice vermicelli) in a piquant coconut milk base flavored with dried shrimp, topped with tau pok (bean curd puffs), prawns, cockles, fish cakes, and chicken. Finally, a spoonful of sambal (Malaysian chili paste) and finely chopped daun kesum (laksa leaves) are added to finish the bowl. Are you craving yet? 328 Katong Laksa is famous for beating world-renowned chef Gordon Ramsay in a 2013 cooking showdown. The eatery dishes out Singapore’s best Katong Laksa. Their recipe features noodles cut up into small pieces that can be eaten with just a spoon. Pair the delicious broth with otah (fish cake grilled in a banana leaf) for the perfect balance of flavors. Be wary of the chili, though. Let the vendor know that you want your order without the spice; otherwise, they’ll put sambal directly on your spoon—you’ll have no other choice but to mix it in your Laksa!
