Cochinillo seems to be the hottest commodity this Christmas season. I have inquired in several restaurants and most of the cochinillo are sold out already. We just love the suckling pig because it is just the right size to be the star of our Noche Buena table . In our family, the opening of gifts and celebration of Christmas happens at the stroke of midnight on Dec 24. In the meantime, virtual Christmas parties are happening all around. We are still bonding over food but in the safety of our own homes . A couple of days ago we enjoyed Alba’s half an order of cochinillo and Paella Valenciana & Negra. Alba’s Restaurante Espanol have been in the business since 1952 and continues to be the family’s favorite Spanish restaurant to date. Their suckling pig or cochinillo was crunchy on the outside and so tender and moist on the inside, it was wiped out in no time. It did not hurt that it was not ostentatiously expensive and was reasonably priced at P3,000 for half the size. Their order list was as long as your arm though and I’m pretty sure they are already booked until New Year’s eve. But you can try . Dont forget to try their paella’s too !
